Golden Snack Mix

Up your snacking game

with this salty, sweet, nutritious and delicious snack mix.

This savory snack mix hits all the right notes: salty and sweet with a little bit of spice and a whole lot of flavor. Plus it’s filled with protein, healthy fats and the goodness that is our Sunshine Golden Milk. If you’re looking for a satisfying, healthy snack that’s not packed with carbohydrates (or to be the hit of the potluck or cocktail party!), this easy recipe will become a staple for you.

Ingredients:

2 Cups large coconut flakes

2 Cups small snack crackers (we used these cauliflower crackers we got at the local coop)

1 Cup raw almonds

1 Cup peanuts (we used lightly roasted, salted)

3/4 Cup raw pumpkin seeds

2 Tsp red curry paste

1 Tbsp + 1 Tsp olive oil

1 Tbsp + 1 Tsp maple syrup

2 Tbsp Sunshine Golden Milk

1/2 Tsp garlic powder

1/2 Tsp salt (can adjust according to the saltiness of other ingredients, like peanuts and crackers)

Directions:

  1. Preheat oven to 250.

  2. Mix first five ingredients in a large bowl

  3. In a small bowl or cup, mix wet ingredients until incorporated.

  4. In a separate small bowl, mix remaining dry powdered ingredients.

  5. Pour wet mix over the snack mix and large bowl, and toss gently until evenly coated.

  6. Add powdered ingredients and toss gently again, until everything is evenly coated.

  7. Pour out onto a lined full size baking sheet, taking care to spread the mix as evenly as possible.

  8. Bake for 12 minutes, remove and stir the mix before returning to the oven. Bake for at least another 12 minutes, or until the coconut chips are nicely browned—removing to stir one more time in the middle of the remaining baking time.

  9. Remove from oven and stir once or twice while cooling. Once completely cooled, store in an airtight container.
